Abstract. The subject of our research is the nutritional quality of the protein component of soybean forage, which is formed in large quantities during the collection and cleaning of soybeans. The purpose is to carry out a comparative assessment of the nutritional quality of the protein component of soybean forage in the diet of broiler chickens and sheep using physiological methods of research. Methods. Nutritional evaluation of forages was carried out by two methods. Zootechnical analysis of forage was carried out in FSBI “Station of agrochemical service “Amurskaya”. Physiological method of nutritional evaluation of soy products was carried out on sheep and broiler chickens with 12-peristal fistula. Trypsin activity was investigated in blood serum obtained on an empty stomach and in duodenal chyme obtained in the humoral stage of digestive regulation in broiler chickens 2 hours and in sheep 5 hours after feeding. In each of the experimental periods (10 days), the animals received a certain soy product at the rate of 30 % in relation to the crude protein contained in the diet. Scientific novelty. This paper is the first to investigate in vivo bioavailability of protein component of soybean products for the organism of animals with different types of nutrition, and in a comparative aspect to consider the nutritional quality of soybean forage as a new feed resource. Results. Comparative analysis of soybean forage with traditional protein supplement – soybeann meal and native soybeans in the diet of feeding broiler chickens and sheep showed ambiguous results. The biological availability for chickens of soybean meal proteins is 44 % higher than that of soybean meal. However, for the digestive system of sheep as model ruminants, the availability of soybean meal proteins is slightly inferior to native soybean proteins. These results are confirmed by the physiological method of in vivo assessment of the nutritional quality of the protein component of the forage.
