Abstract. The study is aimed at studying a new forage crop – quinoa, the seeds of which have a complex of nutritional elements that allow enriching the diet of farm animals and poultry with essential nutrients. Methods. The study of quinoa seeds of the brands “Bravolli”, “Mistral” and “Bolsner” was conducted at the Altai State Agrarian University and the Testing Center of the Federal State Budgetary Institution “All-Russian Research Institute of Animal Husbandry” using standard organoleptic and laboratory methods, followed by statistical analysis of the data obtained. The purpose of the research was to assess the morphology and nutritional value of a new forage crop – quinoa, including the amino acid composition of proteins, the level of essential amino acids and minerals. Results. Morphological assessment showed that the studied quinoa varieties were predominantly yellow to brownish in color of varying intensity. The protein content was 11.7–13.4 %, which is less than that of legumes, but more than that of cereal grains. In terms of the total amount of carbohydrates (66.0–68.7 %), quinoa is inferior to cereals, but superior to legumes. The analysis shows that quinoa has a higher fat content than cereals (4.9–5.9 %), including the amount of polyunsaturated fatty acids amounted to 48 to 53 %, the main one being linoleic acid (41.95–45.35 %). Of the unsaturated fatty acids, quinoa has the most palmitic acid (8.87–9.51 %), and of the monounsaturated acids – oleic acid (23.40–25.68 %). The highest amount of ash elements was potassium – 556 mg / 100 g, in terms of which quinoa was second only to peas (by 175 mg), and the lowest was silicon – 40.4 mg, in terms of which quinoa was second to oats. The scientific novelty of the study lies in the fact that the use of quinoa will not only increase the nutritional value of the feed mixture, making it more accessible for digestion and absorption by animals, but also make the diet more complete and balanced, which is the basis for healthy and physiologically conditioned feeding of livestock and poultry.
