Abstract. The purpose is to analyze the influence of seasonality and different levels of milk productivity on the milk composition (protein, fat, lactose) of Holstein cows kept in light pavilion buildings and to develop, based on the results obtained, a technology for the elimination of major dairy allergens using baromembrane processes. Dairy products are traditionally considered an important element of a balanced diet. However, its use becomes a problem for people with lactose intolerance (milk sugar) or allergies to milk proteins such as beta-casein. Such violations force them to completely exclude not only milk from the diet, but also all derived products. The effectiveness of the microfiltration process as the main method of reducing bacterial contamination of milk, studies on the rational conduct of the diafiltration process, taking into account the seasonal dynamics of milk components of highly productive Holstein cows, studies of the effect of skimmed milk temperature on the process of ultrafiltration elimination of β-casein, have shown the expediency of using baromembrane processes. This determines the purpose of the research. The research methods corresponded to the current standards. The milk quality analysis was performed using the FOSS MilkoSkanTMFT+ device and covered the following parameters: fat percentage, protein percentage, lactose percentage. Beta-casein concentration was determined using a sandwich-type enzyme immunoassay system (MULTISCREEN Beta-casein test system). The laboratory facility used provides an opportunity to study the effectiveness of milk micro- and ultrafiltration processes under various operating conditions and accurately determine the influence of parameters such as pressure, temperature and flow velocity on the separation of milk components. Results. Optimal parameters of the diafiltration process have been determined, taking into account the seasonal dynamics of milk components of highly productive Holstein cows, the expediency of using the microfiltration process in the production of milk with specified properties, and a technology for the elimination of major dairy allergens based on baromembrane processes has been developed. Scientific novelty. For the first time, the effect of skimmed milk temperature on the process of ultrafiltration elimination of β-casein was investigated, the relationship between the main characteristics of the process and temperature was established, and the possibility of extracting the dissociated component from the main part of the protein fraction of the separated product was shown.
