Abstract. The purpose of the study was to test the effectiveness of surface and process equipment disinfection, provide a sanitary and bacteriological assessment, and develop preventive disinfection regimens in sausage production facilities. Methods. In production conditions, disinfection was carried out using a wet method, by finedroplet irrigation directed at the disinfected object in the form of a wide “torch” of small droplets, at a relatively low solution flow rate (0.2-0.5 l/m2). Scientific novelty represents a fundamental aspect in the implementation of new disinfectants in enterprises associated with the production and processing of meat products, safe in veterinary and sanitary terms, and the quality of food raw materials and foodstuffs. Results. The article presents the results of sanitary and industrial testing of disinfectants with a cleaning effect at a meat processing plant. A comparative analysis of industrial tests demonstrated the effectiveness of both “Biolok” and “Steroks Vet” disinfectants in the sausage production facilities of Makhachkala Meat-Processing Plant CJSC in the Republic of Dagestan. Effective disinfection of smooth surfaces with “Biolok” was demonstrated using a 1.0 % solution at a rate of 0.25–0.3 l/m2 with a 3-hour exposure time. Rough surfaces require a more concentrated 4.0 % solution at a rate of 0.5 l/m2 with the same 3-hour exposure time, as required by current regulations for disinfection quality control based on the isolation of coliform and staphylococcal microorganisms. The recommended disinfection method for smooth surfaces is a 0.5 % solution with a 3-hour exposure time and a consumption rate of 0.25–0.3 L/m2 . For rough, absorbent surfaces, a 3.0 % solution is recommended, at a rate of 0.5 L/m², with 1- and 3-hour exposure times. The disinfection performance of the tested products in meat-processing facilities is satisfactory and can be recommended for sanitary and industrial measures to ensure microbiological cleanliness, with quality control for the isolation of E. coli and St. aureus.
